Jozen Mizunogotoshi is a sake brand from Shirataki Shuzo in Echigo-Yuzawa, Niigata. Its name evokes the idea of being “like water,” and the brewery’s classic Junmai Ginjo aims for a clean, clear profile with a soft texture. If you are looking for an approachable first sake or a bottle that works with lighter dishes, it is a familiar place to begin.

What is Jozen Mizunogotoshi?

The brewery says the brand’s name reflects its goal: a sake as clear and harmonious as water. Echigo-Yuzawa is a snowy region, and Shirataki Shuzo draws on soft snowmelt water for brewing. The current Junmai Ginjo is described as clean and crisp, with a fragrant aroma and a smooth finish.

Junmai Ginjo at a glance

  • Style: Junmai Ginjo
  • Rice-polishing ratio: 55%
  • Alcohol: 14–15%
  • Flavor: Clean and refreshing, with a fragrant aroma
  • Serving: Chilled
  • Brewery: Shirataki Shuzo, Echigo-Yuzawa, Niigata

The brewery recommends serving it chilled. Its official pairing suggestions include raw oysters with lemon and glass-noodle salad; the crisp style can also work with sashimi, salads and other lighter dishes. Like any tasting note, “clean” and “light” are broad impressions rather than guarantees of how every drinker will experience it.

What do drinkers say?

BicCamera’s 720 ml product listing showed a 4.8/5 score from 20 reviews when checked for this guide. One recent reviewer described it as very clean and refreshing, and mentioned pairing it with sashimi. This is one retailer’s product-review sample, not a universal rating.

A short history

Jozen Mizunogotoshi was first released on September 5, 1990. For its 30th anniversary, the brewery revisited the classic Junmai Ginjo and relaunched it in 2021. One change was a rice-polishing ratio of 55%, down from 60%; Shirataki Shuzo said the adjustment helped create a lighter, softer mouthfeel while preserving the clear style that had defined the brand.

Where to start

The 720 ml Junmai Ginjo is a convenient entry point. Serve it chilled and try it with seafood or a light meal. If you enjoy a richer style, the brand also includes a Junmai Daiginjo and other seasonal expressions, each with its own flavor and price.
